Blueberry Lemonade Poke Cake

BLUEBERRY LEMONADE CAKE

This post was originally published over at Just Us Four. I am sharing it here as one of my favorite, easy desserts! I’m not even a huge cake fan, but the poke cake has always been one of my favorites. The nice thing about the poke cake, is it’s practically fool proof!! Seriously, you can’t go wrong with this…. (of course if you do, don’t give up. I’m sure there is something else out there that you’re good at)! :)

Blueberry Lemonade Poke Cake
Ingredients
  • 1 Box yellow or white cake mix
  • 1 Box blueberry jello
  • 3 Eggs
  • 1/3 Cup Oil
  • 2 Cups Water
  • 1 Container of Cool Whip
  • 1 Cup Lemonade
  • Lemon juice optional
  • Blueberries
Instructions
  1. Prepare cake mix according to box instructions *but instead of using water, use lemonade. I added a Tablespoon of lemon juice as well for extra lemon taste. Bake at designated temperature and until cooked through. Allow to set for 5 minutes.
  2. Take a tooth pick and poke {Lots} of tiny holes all over the top of the cake.
  3. Bring 1 cup of water to a boil and add the jello mix. Stir thoroughly then add 1 cup cold water.
  4. Pour jello all over the top of the cake, making sure you evenly disperse it across the top.
  5. Cover and cool in the refrigerator for at least 2 hours. Top with cool whip and blueberries. Enjoy!
